Motmot - Light Roast

Motmot (named after the Torogoz bird) has subtle notes of green apple and vanilla, providing a fresh fruity taste as it is a light roast with fruity flavors. Perfect for cold brew. Comes from the Bella Vista farm owned by our very own Monica Dahlby.

During the yellow honey process, as the coffee is drying, the coating on the outside of the beans begin to oxidize and darken in color. Beginning a golden color, coffee is stopped at this point and is referred to as yellow honey process coffee.
